Paula’s date & coconut cake served up with real food ‘caramel’ sauce & vanilla coconut yoghurt

This is my quick and easy ‘caramel’ sauce made from just 3 main ingredients, which is delicious served up as a warm topping over my Date & coconut cake. This combination is very reminiscent of sticky date pudding, but much healthier of course! I’m sure it would be equally yummy over homemade vanilla ice-cream. It really is so simple that you must give it a try! If you have a sweet tooth you might like to add coconut nectar or raw honey, but my tribe and I think it is lovely and sweet without this addition.

what you’ll need:

120g medjool dates
180g plant-based milk e.g. coconut milk
1 ½ tsp vanilla bean paste
pinch fine Himalayan salt

how to make it:

Blend all ingredients together in a smoothie maker, blender or Thermomix. Heat up on the stovetop in a small saucepan on medium heat or in a Thermomix for 2-3 minutes at 80C on speed 2. Pour this thick and delicious caramel flavoured sauce over your favourite dessert cake or ice-cream. Enjoy!
