Raw apricot, buckwheat & coconut cookies

This is a quick and easy raw biscuit (or cookie) recipe which is very versatile (see flavour variation ideas below). While it has been formulated to crisp up to a certain degree in a dehydrator, you could easily enjoy this same recipe as a raw treat ball rolled in coconut or use a conventional oven on it's lowest temperature setting to 'bake' them.

what you'll need:

300g dried apricots (or dried fruit of choice)
300g buckinis (activated buckwheat groats)*
80g dessicated coconut                                                                                                                   
30g chia seeds
2 medium apples, e.g. Pink Lady, chopped into chunks
4 x medjool dates
50g unrefined, virgin coconut oil
20-30g raw honey, coconut nectar or maple syrup (or to taste)
1 tsp vanilla bean paste
1 tsp freshly grated lemon zest (or 1-2 drops Young Living 100% pure lemon oil)
good pinch Himalayan or sea salt

how to make it:

Place all ingredients in a Thermomix or a powerful food processor and press turbo a few times (or use TMX speed 8 for about 30 seconds) until the mixture is well combined and comes together to form a mass. Shape rounded tablespoons of mixture into balls and press to flatten into a round biscuit shape. Dehydrate at 41 degrees C for about 12-15 hours or until the texture is to your liking. Alternatively, if you don't own a dehydrator you can bake at the lowest temperature in your oven until crisp or simply enjoy roll balls of the mixture into dessicated coconut for a raw version. Makes about 24.

variation ideas:

  • in place of the dried apricots use your choice of dried fruit, eg. cranberries, apple, figs or peaches.

  • add spices to the mix, e.g. cinnamon or mixed spice, instead of lemon


*NOTE: Buckinis can be expensive unless you buy them in bulk, so if you own a dehydrator you can activate raw buckwheat groats by soaking 2 cups overnight in filtered water, drain and rinse the next day and dehydrate at 47 degrees C until crunchy. Easy!
